recipes for the cilantro lovers!

buzzy is here so we can get some work done…but i’m forcing her to eat my leftovers from last night, blogging the recipes THEN i will work on the antiques project.

one has to have priorities.

first of all, i’m so glad that some of you wanted my recipes!  thanks a bunch. so here goes, from the kitchen of goodbear:

ingredientsgoodbear’s not-bad-for-a-gringa salsa:

1 fresh jalapeno pepper – chopped

1 fresh anaheim chili pepper – diced

3 medium fresh tomatoes – diced (i like mine chunky)

3 cloves fresh garlic(i sometimes use more!)

1/4 cup fresh chopped cilantro

1/4 cup fresh chopped green onion – green and white parts

1 can stewed tomatoes – dice the chunks

2 tbsp. diced green chilis

salt & pepper to taste

i like my salsa hot and chunky!  the night before serving, chop, slice and dice the peppers, garlic, onion and tomatoes.  mix em up.  take your stewed tomatoes, but before adding them to the mix, slice the tomato to your preferred chunkiness.  add all remaining ingredients EXCEPT the cilantro.

over night the flavors will blend and the salsa becomes a little hotter.  right before serving add the fresh chopped cilantro.  you can add it the night before, too, but since we have so many cilantro lovers here at cody bear’s friends….it stands out more if you add it right before serving.

serves 2 – 15 people, depending on how hungry they are and how tasty the other dishes are!

goodbear’s damn-i-need-a-side-dish easy corn salad:

2 cans whole kernel corn – rinsed well & drained

1 can black beans – rinsed well & drained

1 medium red onion – chopped

1/2 red wine vinagrette dressing

1-2 tsp ground cumin

1/2-3/4 cup chopped fresh cilantro

salt & pepper to taste

prepare the night before serving. in medium mixing bowl mix red wine vinagrette dressing and cumin.  next add chopped onion, corn and beans.  stir ingredients.  and just a little salt & pepper.  again, i like adding the cilantro the next day.  also, depending on what brand of dressing you use, you may want to add a couple extra tbsp.s of olive oil.

this dish takes about 5-10 minutes to prepare.  i have no idea how many folks it serves.

tonight’s writing challenge involves these tags: fire pit, honey, wooden nickel, cilantro, stars

i am a fire pit.   bright and welcoming under the late night stars.  in the morning kind of a pile of ashes.

black light party time is coming.  fire pit season is on it’s way. we’ll meet at my house after dark, set up the lights, pop open some beers and wait for the night life to fly in.  transparent wings and round, protruding eyes. i can’t wait!

i’ll be tired the mornings after, but wake up while at work and rush home to photograph the dogs and the resident bees. (mind you, these aren’t honey bees. they’re native bees.  they won’t kill me, i swear!)

for snacks i’ll make a salad with black beans, corn, cumin, cilantro, balsamic vinigar and red onions. . . but. . . bella and buzzy will eat pentatomid bugs instead.

save up your wooden nickels and you can buy into the fun.  primordial night life.  flying things in your hair.  pickles herding beetles.
